Recipe 7 Baked bbq jerk chicken breast with Kale and rice
Ingredients
- Chicken breast (1-2)
- Bbq marinade sauce (6-7 table spoons)
- Sea salt (couple of grinds)
- Pepper (couple of grinds)
- Lemon and lime (small squeeze)
- Kale (1/3 of a bag)
- Boil in the bag Basmati Rice (1)
- Fresh red and green chillies (1 each)
- Step 1
Marinade the chicken breast in a bowl adding the bbq marinade sea salt Pepper Lemon and lime juice completely smothering chicken. - Step 2
Place the chicken on foil wrapping it completely and placing it in the oven for 15-20 mins at 180c - Step 3
Boil the rice according to packet instructions - Step 4
Boil the Kale for 3 4 mins - Step 5
Plate the Kale and 1/3 of bag of rice - Step 6
Remove chicken. Carefully taking out of foil and plate. Can use the juices in foil to flavour rice if required
