Recipe 07 – Baked BBQ Jerk Chicken Breast

Recipe 7 Baked bbq jerk chicken breast with Kale and rice 

Ingredients

  • Chicken breast (1-2)
  • Bbq marinade sauce (6-7 table spoons)
  • Sea salt (couple of grinds)
  • Pepper (couple of grinds)
  • Lemon and lime (small squeeze)
  • Kale (1/3 of a bag)
  • Boil in the bag Basmati Rice (1)
  • Fresh red and green chillies (1 each)

 

  • Step 1
    Marinade the chicken breast in a bowl adding the bbq marinade sea salt Pepper Lemon and lime juice  completely smothering chicken.
  • Step 2
    Place the chicken on foil wrapping it completely and placing it in the oven for 15-20 mins at 180c
  • Step 3
    Boil the rice according to packet instructions
  • Step 4
    Boil the Kale for 3 4 mins
  • Step 5
    Plate the Kale and 1/3 of bag of rice
  • Step 6
    Remove chicken. Carefully taking out of foil and plate. Can use the juices in foil to flavour rice if required
